Need a quick appetizer to bring to a summer soirée? Visit my pantry and you are very likely to find can or two of garbanzo or chickpeas that in minutes can be transformed into a creamy, rich hummus with the pulse of a food processor and a few essential oils.
My recipe will serve a crowd (and skip the toast points) and you really do want to buy or make a big batch of quality pita chips for dipping.
4 - 15 oz cans of garbanzo beans or chickpeas
1 c water
1/2 - 1 t garlic powder
sea salt to taste
2 t toasted sesame oil
1/2 c organic olive oil
10 - 12 drops of Lemon essential oil
2 drops of Cumin essential oil
Drain beans and add to large bowl of food processor with about 1/4 c water - process in batches if you have a smaller processor. Let it run for about a minute, then scrape sides of bowl. Repeat and more of the water until you have a smooth consistency.
Add garlic, a hefty pinch of sea salt (start with 1/2 t and taste before adding more), and sesame oil. Pulse several times to blend thoroughly into your mixture.
Add the essential oils (start with smaller amount if you're not sure about quantities) to the olive oil, give it a gently stir, then pour oils through the feeding tube while running the food processor.
Adjust salt, garlic, and essential oils as needed. Remember, with essential oils, less is more!

These recipes came from my friend Astrid, a certified aromatherapist and talented eo-mixologist. As you will see, Bergamot is one of her favorites and is an ingredient in all but one of the diffuser blends. You can adjust essential oils or quantities for therapeutic use or personal aromatic preferences.

½ c liquid castile soap (baby, unscented)
¼ c warm distilled or purified water
¼ c aloe vera gel (not juice)
½ t sea salt
2 T vegetable glycerine
1 T olive oil or fractionated coconut oil
8 drop Melaleuca essential oil
5 - 10 drops of your favorite essential oil for skin
Combine all ingredients in an essential oil safe foaming hand soap bottle; use glass or a plastic that has been designed for use with essential oils (doTERRA's OnGuard foaming hand soap bottles are perfect).
Melaleuca essential oil--supports healthy skin and aromatically, it promotes cleansing and purifying, and the scent blends well with citrus like Bergamot and Wild orange or other essential oils such as Cypress, Eucalyptus, Lavender, Rosemary, and Thyme.
woodsy beard oil
Makes 2 - 3 ounces
Small glass eyedropper or cap bottle
1 ounce fractionated coconut oil or ½ ounce jojoba oil plus ½ ounce sweet almond oil
1 T fractionated coconut oil
3 to 4 drops Cedarwood oil
3 to 4 drops Sandalwood oil
Add fractionated coconut oil and other oils to the bottle. Next, add the essential oils, place the cap on tightly and shake well (before each use). Using your hands or eyedropper, apply a few drops and massage into the beard and onto the cheeks. Brush the beard for the finishing touch.
Cedarwood essential oil--offers natural properties that can help to reduces skin irritations. Aromatically and even has aromatherapy benefits for balancing emotions and feelings of self doubt. Did you know that cedarwood symbolizes a source of protection, wisdom and abundance?
Sandalwood essential oil--can help with dry skin and hair when applied topically; also soothing to any skin irritation. It is also a natural astringent, and some say an aphrodisiac. Aromatically, it can help balance emotions, is calming, mood enhancing, and may help with mental clarity. It’s aroma is woodsy, sweet, earthy.
1 c fractionated coconut oil
5 to 10 drops of each: Melaleuca, Eucalyptus, and Juniper Berry essential oil
Top with distilled or purified water to thin
Combine all ingredients in a small glass bottle (optionally, a bottle with a spray top). After shaving, spray on affected areas or splash on and enjoy the invigorating qualities and aroma. Shake before each use.
Juniper berry essential oil--offers astringent and cleansing properties, and can help with reducing inflammation of the skin. By the way, make an excellent toner by adding to alcohol free witch hazel.
Eucalyptus essential oil--may help reduce inflammation of the skin and it naturally helps clear the airways (helpful during this time of year when seasonal threats are high and we are dealing with congestion). Eucalyptus blends well with Bergamot.

Soy wax or beeswax
Cinnamon bark, Clove, Wild orange essential oils (or make your own blend)
String for dipping into wax
Colored crayons and salt (optional)
Cut the string long enough to use for dipping the pinecone into the wax and tie a knot at
the top of the pinecone.*
In a double boiler or a metal bowl resting in pot of water, melt enough wax and 2-3 crayons (if you want to add color) to coat your pinecones. Add essential oils
(more drops will make for a stronger the scent ).
Holding the string, dip the pinecones and set them on wax paper to dry. Keep dipping and drying to create a thick layer of wax on the pinecones. If desired, coat with salt immediately after the last wax coat for a natural glitter.
Depending on the salt, the flames of the starters will burn a certain color (Epsom salts,
white flame; table salt, yellow flame; salt substitute, violet flame). *Note: After you are donedipping you pinecone into the wax, leave one inch of wax-covered string to serve as a wick
for easier lighting.

New Mexico peaches are just coming into season. Try this salsa as an side for grilled fish, chicken, or pork. And serve with a few homemade tortilla chips to scoop up every last morsel of summer goodness.
Remember, improvising is half the fun with cooking. Add or substitute chopped mango for the peach. And, pictured below, we garnished with flat leaf parsley (didn't have any fresh cilantro on hand).
3 peaches, diced; optionally, add some chopped mango
2 medium tomatoes, diced
1/2 jalapeno, seeded and fine diced
1 -2 sweet mini red peppers, fine diced
1 -2 green onion shoots, thin sliced - or - about 2 T fine chopped red onion
A few sprigs fresh cilantro, chopped
1 squeeze lime juice or a splash of white wine vinegar
Sea salt to taste
Optional, local honey to taste
2 drops each Lime and Cilantro (optional Ginger) food or therapeutic grade essential oils*
Combine diced peaches (and optional mango), tomato, jalapeno, red pepper, green onion (or red onion), and cilantro. Add the juice or vinegar, salt to taste. Add essential oils (1 drop at a time and taste between additions). Toss all ingredients. Taste and adjust salt, juice or vinegar, and add honey if desired. Let stand for 45 minutes.
The flavor of the essential oils will develop as it stands. Taste again before serving. May be refrigerated or use immediately. Serve as a salsa with homemade chips or as a side to grilled fish, chicken, or pork.
Makes enough to serve as a small portion to 3 or 4.
* Most essential oils available at your natural grocer or health food store are NOT food or therapeutic grade. Be sure to carefully check the label. If it's food grade it will include Supplement Facts and instructions for use internally.

chilled minty pea soup
Make six cups or 1 1/2 quarts
2 T butter
3 medium leeks (white and light green parts only; rinsed, drained, chopped) or four stalks of celery (fine chopped)
32 oz homemade farmers' market vegetable broth (or store bought chicken or vegetable)
2 c fresh peas
sea salt and pepper to taste
1 c Greek yogurt or sour cream, plus more for garnish
1 drop of Spearmint essential oil* (optional; may substitute a tablespoon of fresh chopped mint)
Creamy garnish . . .
1/4 c Greek yogurt or sour cream
1-2 drops Lemon essential oil (may substitute lemon zest from 1/2 a lemon)
Get creative with garish: dollop of Lemon-scented Greek yogurt or sour cream, fresh mint, a few peas, pea shoots, sliced chives or green onion
Melt butter in a large saucepan over med-low heat. Add chopped leeks or celery, and cook, stirring occasionally, 6 - 8 minutes or until tender. Stir in broth, and increase heat to high. Bring to a boil. Add peas, reduce heat and stir occasionally. Cook until peas are tender (about 3 minutes).
Remove from heat and add salt and pepper to taste. Mix in Greek yogurt or sour cream.
Process pea mixture until smooth and creamy - use an immersion wand in the pot or process, in batches, in a blender, food processor. Taste for seasoning (salt and pepper) and add more if needed.
Whisk or use a rubber spatula to fold in mint (Spearmint or Peppermint) and thorough mix in with spatula - remember to taste after each drop or addition. Chill 30 minutes to an hour.
meanwhile . . .
Make a Lemon-scented Greek Yogurt or Sour Cream mixture (just add a drop of Lemon essential oil to 1/4 c of yogurt or sour cream, mix well, taste, add another drop if desired).
Serve - pour into small 2-oz glasses. Top with a dollop of the Lemon-scented cream mixture.

These cologne recipes are unisex. Feel free to switch up the oils to make your own personal blend. We used approximately 20% oil and 80% carrier oil based. If you want a stronger scent, you can make it a 30/70 ratio. The cologne recipes below make 1/3 oz. and the amounts are intended for use with a 10mL rollerball vial.
10 ml Glass rollerball vial, recipes below make 1/3 oz
Dropper or pipette (optional)
Fractionated coconut oil
Combine a tiny amount of fractionated coconut oil and all the essential oils in the vial. Use a dropper or pipette, if you prefer, to add the essential oils. Add more fractionated coconut oil to fill the bottle. Attach roll-on top and cap, then shake until combined. Let mixture sit for 24 hours before use. Apply cologne to wrists and pulse points for best results.
Make a small batch first to be sure you like the scent. Modify as desired or, if it's just right, continue to make a larger batch.

Recipe featuring pure, therapeutic grade Vetiver and Wild Orange essential oils
Lassi is a drink popular throughout the Indian subcontinent. It's made with yogurt, spices, and sometimes fruit. A traditional lassi is a savory and often flavored with roasted, ground cumin. Pureed fruit, most often mango, may be added for a "sweet lassi."
Todays lassi recipe is a hybrid. It starts as a Khus Lassi, then we add fresh orange segments, local honey, and touch of "khus syrup." or simple syrup made with pure, culinary grade Vetiver essential oil (recipe included below).
"Khus" is the Hindi name for Vetiver. Traditional khus syrup is made by soaking dry vetiver grass for 12 or more hours then straining to collect the extract. Sugar is then added and the mixture heated on a stove top until the sugar is melted. The syrup can be used to flavor sherbets, milkshakes, yogurts, and ice-creams. But check out our two easy methods . . .
our two methods
Our two methods are much simpler and doesn't involve shopping for vetiver grass that is free of synthetics, coloring, and preservatives. We substitute the fresh grass with pure, therapeutic (culinary) grade Vetiver essential oils to produce a Khus Syrup or Khus Honey that is good for the digestive system, endocrine system, immune system, nervous system, neurotic and excretory system. It helps to support metabolic function, rejuvenates the body, and boosts immunity.
recipe: khus syrup
Ingredients (makes 1 1/2 cups of syrup)
1 c raw sugar
1 c water
3 drops Vetiver essential oil
Heat sugar and water over medium heat. Stir continually until sugar is melted. Remove from heat and cool before adding the Vetiver essential oil.
recipe: khus honey
1/4 c local raw honey
1 - 2 drops Vetiver essential oil
recipe: khus lassi with orange
1 c plain Greek yogurt
1/2 c chilled milk or half milk-buttermilk or nut milk
1-2 T Khus syrup or 1 T Khus honey
About 2 T local raw honey or to taste
1 c crushed ice
1 large navel orange
2 drops Wild Orange essential oil
2 T chopped pistachio nuts or cardamom pods (optional; garnish)
Place yogurt, milk, syrup, honey, and crushed ice in a blender.
Cut away the peel and pith from oranges. Working over a bowl, cut segments free of membranes. Transfer segments and juices in bowl to the blender, and puree until mixture is smooth, about 1 minute.
Pour lassi mixture into 2 chilled glasses. Garnish with chopped nuts (optional), mint leaf, or orange slice. Serve immediately.
other variations & tips
Traditional Khus Lassi
Simply omit the orange segments and Wild Orange essential oil
Omit the Khus syrup (vetiver simple syrup); keep the orange segments, 2 drops Wild Orange and 1 drop Cinnamon essential oil
Omit the Khus syrup; add chunks of rip mango or about 1/2 c mango puree, and 1 drop Cardamom essential oil
Tips: Chill the glasses before serving. Get creative, experiment with fruits and essential oils to make your own special lassi. Always remember to add a beautiful, fresh garnish.
