Yesterday, we participated in a health fair intended to provide New Mexico state employees with resources and information for managing stress in their daily work and personal lives. We shared samples of our amazing essential oils and featured some popular stress-busters including lavender and lemon, and three blends formulated to help reduce stress and anxiety: focus blend, joyful blend, and calming blend. recipe: raw cocoa bites
Soak walnuts overnight for for several hours ~ rinse, drain, rehydrate until water becomes clear. Grind walnuts in food processor until it resembles a grainy dough. Transfer to mixing bowl. Blitz dates and soaking water in food processor and add to walnut dough. Add chia seeds, cocoa powder, and cacao nibs to mixture and combine using a spatula or wooden spoon. Gently fold in essential oil and optional sea salt and vanilla to the mixture until combined. Taste and adjust ingredients to taste.
Shape into bite-sized spheres about 3/4 inch in diameter and place on wax or parchment lined sheet pan or dish. Optionally, roll in fine shredded coconut, toasted coconut, or raw cocoa powder. Refrigerate until chilled and serve.
Party favor idea: Place a single cocoa bites in small cellophane bags, Tie with gold or silver twist-ties or simple ribbon. Arrange stacked in a large clear glass bowl or serving tray.
